If you’re looking for a super easy “throw together” style recipe that can be either breakfast, snack or dessert then you came to the right place! Gluten free, soy free and no added sugar (beyond what is in the dark chocolate chips and the fruit, to be clear). BUT easy, and with ingredients you may likely already have in house.

No long winded stories about how my day went before giving you what you came here for, all I will say is that this is quite like my banana oat muffin cookies that I make often in this house as a staple when we have a build up of mushy bananas, only I stepped it up a bit and it turned out fantastic. As someone who doesn’t care for baking unless its bread, this is perfectly simple, so if you are also one who happens to despise baking you could give this a go!

What you need
4 ripe bananas
1/3 cup almond milk (or other milk alternative)
1 tsp vanilla extract
¼ tsp salt
¼ cup almond or peanut butter (or other nut butter)
2 cups quick oats
¼ cup dark chocolate chips
1 cup frozen (or fresh) mixed berries
Optional – ¼ cup Chopped walnuts
1 tsp cinnamon



What you need to do
Pre-heat oven to 400 degrees F. Mash bananas into large casserole dish and add milk, vanilla, salt, nut butter and mix until well combined. Add quick oats and chocolate chips (and chopped walnuts and/or cinnamon if desired) and mix well. Sprinkle frozen (or fresh) berries over top and place in preheated oven for 30-35 mins (or until slightly firm in the middle). Allow to cool and enjoy! Can be eaten as a delicious breakfast, dessert, or snack. Cut into bars for easy grab and go or have on a dish and drizzle with just a bit more nut butter if desired!
